1 large American Salad Blend bag (Iceburg lettuce, carrots)
1 medium red onion, very thinly sliced (not diced...but don't make the slices more than a fork size bite)
1 jar bananna pepper, drained
2 cans medium sized black olives, sliced
additional Parmesan for garnish on every salad
Croutons (what ever kind you fancy)
4 ripe tomatoes, seeded, and chopped
SALAD DRESSING:
1 C mayonnaise (you can substitute lite)
1/4 C Paul Newman Italian Dressing (you can substitute lite)
1/3 C white wine vinegar, or good cider vinegar (you can use white vinegar if that is what you have)
3 Tbls corn syrup1
1 C parmesan, or romano, or combo of both (much better if you buy the freshly grated, or shredded
2 cloves garlic, minced
1/2 Tbsp Italian herb mix
1 Tbsp fresh parsley, minced or 1 tsp dried parsley
2 T lemon juice
1 tsp freshly ground pepper
additional Parmesan for garnish on every salad
Croutons (what ever kind you fancy)
Combine dressing ingredients in blender. Pulse until well combined. This dressing travels well, so if you are packing up package to take to another home, just put into jar, or container with a tight fitting lid.
I pack all the additions to the salad in separate bags to be added just before serving with instructions to add the salad extras to the lettuce blend, and toss. Pour dressing over all, and toss again just before serving! With bread sticks, or garlic bread it could be a light summer meal!
