Crispy Roasted Cauliflower

2 Tbsp butter
2 Tbsp olive oil
3/4 C fresh whole grain bread crumbs, divided
3 Tbsp minced fresh parsley
2 Tbsp freshly grated parmesan cheese (you can substitute pre grated, or shredded if you need too)
1 whole head cauliflower, washed, and trimmed into separate flowerettes.

Steam cauliflower for 10 minutes, or until slightly tender. Drain well. Preheat oven to 350 degrees.

Melt butter and add olive oil. Combine and add 1/2 cup of the bread crumbs. Put cauliflower into well greased casserole dish. Pour butter/oil/crumb mixture over, and stir well to get some of the crumbs on all of the cauliflower. Bake for 15 minutes and remove from oven and add the last 1/4 C of bread crumbs. Stir all gently to mix dry bread crumbs throughout the vegetables. Sprinkle with the parsley, and parmesan and return to oven for another 10-15 minutes, or until the breading is nicely browned and the crispy.
