Kiyuri Namasu

2 cucumbers, thinly sliced
1/2 tsp kosher salt
1/4 C white vinegar, or rice wine vinegar if available
1-1/2 tsp sugar
1 tsp finely chopped fresh ginger

Peel cucumbers and split in half lengthwise. Cut cucumbers into very thin slices and sprinkle with salt. Let stand for 15 minutes. Squeese out excess water. Mix together the remaining ingredients and add to cucumbers. Chill.
