Appalam - South indian special

Appalam

Ingredients :

  • Appalam flour/urud flour- 1/4 kg
  • Rice flour - 1/2 cup
  • Cumin seeds - 1/2 tsp
  • Salt - 1/2 tsp
  • Asafoetida - 1/4 tsp
  • Baking soda - a pinch
  • Pirandai - 10 bits
  • Castor oil - 1 tsp
  • Ghee or coconut oil - 6 tsp

Method :

Grind pirandai and salt nicely.Add 1/2 cup water and boil.Add baking soda. Filter the water and add this to urud flour. Add asafoetida, cumin seeds and castor oil.Knead it to a hard dough.Now add ghee and make it very soft.Using this dough, make thin appalams using a chappathi roller.Dry the appalams the next day in hot sun.

what do you mean by pirandai.pls explain is it nessacry to have castor oil

or any simple way to do udad appalam

Pirandhi is an South indian herb. Without this also you can make appalam

Without using Oil/Ghee , You will not be able to roll the dough thinly..

In the ingredients Rice Flour is mentioned, But when we are usimg the Rice flour? Pls esxplain.
