Preheat oven to 350
I started my basic marinara sauce first ( refer to my spaghetti recipe) its contains whole peeled organic canned tomatoes/tomatoe sauce, diced carrots, celery, onion, and garlic.
1lb. elk sausage (or half beef/half pork)
2 slices of crumbled bread(GF canyons bakehouse-sanjuan 7grain) moistened with water
1tbs red wine (or milk)
4 sliced green onions
1 egg
salt&pepper to taste
1tbs fresh chopped parsley
I let my meat sit out until room temp., mixed in the parsley and onions, whisk egg and mix, bread crumbs then the red wine and combine with fingers until everything comes together, don't over squish.
I made medium sized balls and cooked them on one side on the castiron griddle for about 20 min. (you could sear them in a pan with a little oil on each side for 5min instead). Remove from oven and put right into the simmering marinara. Cooked the pasta and continue cooking the meatballs in the sauce for another 15 min on the opposite side they were grilled on and serve with fresh mozerella!
