wok full of hot oil - canola or peanut oil
1lb. medium sized peeled shrimp
1 large yellow onion
1/2c flour (i used pamelas pantry) seasoned with cayenne, paprika, black pepper and celery salt
This is your batter:
1/2c buttermilk
1/2 lemon
1/4c plain pamelas flour
Okay, set up an assembly line, start with the dry peeled shrimp, then dip in your batter (this should be pretty thick), then dip in dry flour mixture with your seasoning, then it goes in the oil. Cook until golden brown on both sides. Drain on a plate lined with paper towels. You won't be able to fry all at once so you can keep them warm in the oven until finish. At the end do the onion rings because you can throw them all in at once, again cook until golden brown and drain.
Sidedish - in food processor/blender, 1/4 onion (left over cut from rings), 2 garlic cloves and 1 tomatoe, blend, reduce in sauce pan until thickend. Use a peeler and peel 1 yellow squash into strips. At the very end take pan off heat and throw in squash, serve as a side dish/cocktail sauce!
