1/2 bell pepper - diced1/2 red onion - diced
3 garlic cloves -minced
1/2 lb. shrimp (fresh or frozen)
1 can of clams in water
1/4c white wine
1/4c vegetable broth
1 package of pasta ( i like GF quinoa)
Heat olive oil in a pan, sautee veggies unitl softened. Pour in your liquids to deglaze and reduce by half. Sprinkle in some red pepper flakes if you like some heat and a little salt&pepper. Prep your shrimp ahead of time and have ready. Start your pasta and cook until al dente. Once sauce is reduced add a little butter or cream and then your clams. Bring back up to a simmer and add your shrimp. They only take a few minutes to cook through. Drain your pasta and put into your sauce with some grated parmesean and mix. Keep on heat until your pasta is desired tenderness and continue to toss everything until evenly coated. Serve with some toasted bread. Delicious. Love to top this off with some fresh chopped parsley and a little more parmesean.
