I start with chopping my veggies...Finely chopped carrots, celery, and onion. If
you want a more southwestern style sauce add some green bell pepper to the mix.
Heat up a good sized saucepan with some olive oil(colivita is amazing). Sautee
all your veggies until onions are almost translucent. At that point add the
garlic either thinly sliced or minced, i love garlic so i added about 6 cloves.
I like to use lean ground beef in mine but you can do vegetarian, turkey,
buffalo, chicken or wild game if you're feeling really adventurous. Brown your
meat on both sides add Salt & Pepper (if you like spice add some red pepper
flakes at this point). Mix it all together until the meat is fully cooked.
Okay the tomatoes, I use organic pre-diced canned tomatoes, canned plum tomatoes, fresh tomatoes diced or a combo of all of the above. Add a minimum of 1 can diced or whole and 1 can of sauce.
If you want to do your own fresh tomatoes you just need to blanch them in boiling water until the peel cracks, put into a bowl of ice water, peel the skins, chop in half and remove the seeds. Put into a food processor and puree!
Once your tomatoes are in bring you sauce up to a boil add two bay leaves, any herbs you like basil, oregano etc. salt&pepper to taste and simmer for at least 30min on low.
At this point cook your favorite pasta, and either mix into sauce or pour the sauce on top with a fair amount of parmesean cheese and plate it up!!!
So delicioius! I like to make quick garlic toast in the oven with butter and garlic powder and serve on the side! Enjoy
