I haven't tried these muffins out yet but I think they sound fabulous and the
kids would really enjoy helping out. If you and/or your kids give these a
whirl, please let me know what you think
Ingredients:
1-1/2 cups all-purpose flour
1/2 cup sugar
1-3/4 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
2 egg whites
1/2 cup skim milk
3 tablespoons olive oil
3 tablespoons applesauce
1 medium tart apple - cored peeled and grated
In a small bowl combine the flour, sugar, baking powder, salt, ground cinnamon & nutmeg. In another bowl, mix egg, milk, oil and applesauce. Stir into dry ingredients until just moistened. Stir in apple.
Fill greased or paper-lined muffing cups two-thirds full.
Bake at 400 degrees for 18-20 minutes or until a toothpick comes out clean. Cool for five minutes before removing from pan. Serve warm.
Makes 1 dozen
