Cin's Funnel Cakes

1 large egg
1/2 c. milk (more or less)
1 cup all purpose flour
1/2 tsp. salt
2 tsp. baking powder
1 tsp. vanilla extract
oil for frying
powdered sugar or cinnamon/sugar mix

In a medium size bowl thoroughly whisk egg until frothy( a minute or two). Whisk in milk. Add flour then vanilla. Whisk in salt and baking powder. Add a splash or two more milk if needed (batter should be a little bit thicker than pancake batter). Pour enough oil in a fry pan to allow funnel cake to "float" (about 1/2 to 1 inch of oil). "Funnel" the batter into oil. Start with a circle, then criss-cross, and circular type patterns. Pouring batter into empty ketchup bottle works best and gives you more control than an open funnel. Fry each side about 1-3 minutes. Lay on paper towels and sprinkle with your choice of sugar. Enjoy!
