Hello all,

I'm Crystal AKA Chef Manny's wife. Our group of friends have a version of Iron Chef parties. The host/chairman announces the date of the Iron Chef and a few days before the dinner party the chairman will announce the ingredient. On the appointed date and time, all invited bring their dish, all taste each dish, and then vote on their favorite. There is no trophy or cash prize, just bragging rights! Here is my award winning recipe.

Parsnip and Carrot Soup

1 pound of parsnips--peeled and chopped
1/2 pound of carrots--peeled and chopped
1 qt. chicken broth
1 cup milk or half and half
5 slices of bacon
1 small onion
salt and pepper

In a stock pot add parsnips, carrots, and broth into a pot. Add enough water or broth, salt and pepper to fill the pot halfway. Set to heat and wait for vegetables to get soft.

Slice one small onion and dice bacon and place both into a sauté pan, cook until onions are soft and bacon is cooked.

Once the parsnips and carrots are fork tender, turn off the heat. Add milk and bacon/onion mixture to parsnips and carrots. With an immersion blender, blend until smooth. Check for proper seasonings and enjoy!
