What to fix for dinner!?!?!

Woe is me! I have no idea what to prepare for dinner. I've been talking about comfort food for a couple of days, but oddly enough my usual comfort-food-entrees aren't sounding appealing. I must be at my maximum comfort level icon_wink

So the dilemma begins...

Do you do this? I stand in front of the fridge, both freezer and fridge doors open. Staring blankly as if waiting for something will jump out and say "TaDah! I'm your dinner!"

What is everyone else having? Maybe I'll browse this site a little - there have been lots of recipes put up lately! The trick is finding one where I have ingredients on hand. I'm almost thinking I could go for something exotic. But of course, that would probably require a jaunt to the supermarket.

Maybe I need to start planning better for dinner. Too often I encounter this - and I don't like resorting to getting takeout everytime I get stumped for a meal (which actually is sounding kinda good right now - there is a great Asian restaurant nearby that has awesome food - horrible ambience if you eat in, but fab food otherwise).

Carla, I feel your pain! Too often I do the same thing, staring into my fridge, freezer or cupboard for inspiration.

Luckily, I keep lots of things on hand (which is an understatement, if you ask any of my friends). I am a grocery-store packrat, and if something is on sale, I'm likely to buy three - eat one, freeze two!

So, for me it's a matter of WHAT...I typically have pork chops, steaks, ground beef, chicken (whole and parts) on hand, not to mention roasts of varying kinds).

I also keep a variety of canned veggies on hand, for when I don't have fresh. Rice and pasta are also staples.

So, in a pinch, I can come up with a nice, balanced meal. But sometimes I want to make something more interesting, and can't unless...I go to the store!

I'm glad to hear I'm not alone! Part of my problem is storage - my apartment fridge is pathetically (sp?) small and I have little cupboard space. It's tragic really. I keep joking to my friends that I'm going to start sleeping on the couch and turn my bedroom into a pantry.

Still undecided on what to eat for dinner though. And the tummy is starting to growl.

Pork tenderloin, 2 whole chickens (no way they'd thaw in time), some frozen prawns, a small boneless turkey breast... geez, I need to defrost this thing.

I'm thinking the prawns are probably the quickest thaw at this point. I'll probably saute them in some spicy oil and serve over linguine. I have some super-fresh french bread, fixins for a mixed greens salad, and a bottle of chilled white wine. Damn, now I'm drooling.

WOW! That sounds delicious! I don't feel so bad for you now ;->

I was gonna eat some leftover short ribs, but after reading your post I got in the mood for cooking (and looked in my freezer).

I ended up thawing some chicken thighs, which I seasoned (garlic, thyme, rosemary, s & p), then coated in bread crumbs. Oven baked, then served with a salad, buttered noodles and bread. And a bottle of La Crema Chardonnay.

Suggestion: take a chicken out to thaw for Tuesday or Wednesday's dinner!
