Pumpkin Seed Cheeze

Pumpkin Seed Cheeze
Similar to a Lemon Stilton.

Soak raw pumpkin seeds in water (approx 4 hours, sprout if time is available)
Rinse water from seeds

Boil lemon lemon rinds and peel. I save these when I use lemons. They add a great flavor and the pectin in the peel provides fiber.

Putting ingredients in blender:
Add pumpkin seeds
Add boiled lemon rinds and lemon peel.
Advertisement:

Add apple cider vinegar
Add sea salt

Puree in a blender and add filtered water as needed.

Place mixture in a "ball" jar. Leave room for fermentation. The nuts will expand a bit.

Ferment for 1-2 days out of the refridgerator.
Then refridgerate.
The longer the nuts ferment, the cheesier the nut puree will taste.
