I only use the freshest squash possible for this recipe.If I did not grow it
myself then I usually buy it from my local farmer's market.Enjoy!
Ingredients
2 pounds of summer squash (I use yellow) which is about 4 large pieces,cut into slices
1 medium yellow onion,chopped
1 tsp oil (I use olive or safflower)
1 tsp salt
1 slice bacon (I use the applewood variety)
1 tsp sugar
3 tbsps melted butter
3 tbsps all purpose flour
2 large eggs, room temperature and slightly beaten
1 cup milk
1 1/2 cups sharp cheddar cheese,grated
1 tsp pepper
1 cup buttered bread crumbs (see recipe below)
Saute bacon,squash,onion,salt and sugar with the oil in a large pan.Cook until the squash become tender and slightly transparent.Remove the bacon slice from the squash mixture.Discard or eat!Drain off any excess liquid, add mixture into a mixing bowl and mash the mixture thoroughly with a fork.Add the pepper,melted butter,flour,eggs,milk,and cheese into the squash mixture.Turn the mixture into a buttered casserole dish.Bake in a 350 degree oven for 30 mins or until firm.Remove from oven,sprinkle the top with the bread crumbs,pour butter over them,and return the casserole to the oven and continue to bake for another 10 mins.Allow the casserole to cool for about 15 mins before serving.Enjoy!

3 slices of bread (any kind you like)
4 tbsps melted butter
Toast the bread in the toaster until nearly a dark golden brown.Then slice each piece into small cubes.Sprinkle bread cubes over the casserole.Then pour the melted butter over the top.This is a quick easy way to make fast bread crumbs for a recipe.
