Mouthwatering Moravian Sugar cake

This is one of my favorite things to eat and make.It simply cannot be beat reheated for breakfast the next morning! I think it always tastes better the next day anyhow.Be forewarned that this recipe must rise 3 times in order for it to achieve the desired effect.Enjoy!

Ingredients

1 package active dry yeast
1/2 tsp granulated sugar
1 cup warm water (not hot,not boiling...warm to the touch)
3 cups all purpose flour

2 tbsps milk (I use skim)
6 tbsps of dehydrated potato flakes
1/3 cup granulated sugar
3/4 tsp salt
2 large eggs,at room temperature
1/2 cup unsalted butter,softened

Topping Ingredients

1 tbsp milk
2/3 cup dark brown sugar
1 tsp cinnamon
1/2 cup butter,melted and cooled



*Tip: I mix these ingredients in my Kitchenaid mixing bowl and then attach it to my mixer when needed to make cleanup easier.
Pour water into large mixing bowl and sprinkle yeast and sugar onto the top of the water.When it begins to dissolve and starts to bubble add all other ingredients order EXCEPT 1 cup of the flour.Beat in a mixer
on medium speed for about 5 minutes.Spoon in the remaining 1 cup of flour to form a soft dough (it's ok if it is a little bit sticky at this point).Remove the bowl from the mixer,cover with plastic wrap, and place in a warm spot so that the dough may rise.You want the dough to double in size which should take about 1 1/2 hours.After the dough has risen,beat it back down again and let it rise again using the same method as before (this time it only needs to rise for 45 mins).Turn dough out into a square greased baking pan (I like to use the 9x9 square disposable aluminum ones).I put a little bit of oil on my clean hands and gently spread the dough across the surface of the pan.Cover lightly with plastic wrap and let it rise so that the dough can lighten (about 1 hour).After the dough has risen for the third and last time, brush lightly with the 1 tbsp of milk.Combine brown sugar with the cinnamon and sprinkle mixture evenly over the top of the dough.Using the end of a spoon handle or a clean fingertip, make small indentations in the top of the dough (I use my finger and I go all the way to the bottom of the pan to form pockets).Pour the butter over all of the dough making sure that some drips into the pockets that you just made.Bake for about 15 mins in a 375 degree oven (or until the top is a very dark golden brown).Let it cool for 15 mins before cutting and serving.Enjoy!

*Helpful hint- If you notice on the third rising that the dough is rising more than 1 inch above the top of the pan immediately stop the rising process and go ahead and top it and bake it.This will prevent large pockets of air from getting trapped in the dough.Usually this doesn't happen to me when I make this recipe but a few times it has depending on the yeast I use so I just wanted to give a heads up.Also if the dough is not rising like it is supposed to then chances are the yeast you used is bad and you will have to start over again from scratch.Try to use the freshest yeast you can to give you the desired effect.
