Fiesta Corn

Fiesta Corn

2 tbsp butter
3-4 ears of corn (either white or yellow) cut off the ear
1 can of drained and rinsed black beans
1/2 red pepper, diced
1/2 yellow pepper, diced
1/2 onion, finely diced
1 tsp salt
1 tsp black pepper

Heat butter in a skillet until it begins to bubble. Add in onion and cook until onions become a little translucent. Then add in corn and saute for another 5 mins. Add in both types of peppers,black beans, and salt and pepper. Heat on medium high, stirring occasionally until done for about 10-15 mins. You will know the dish is done when the black beans become soft. Enjoy!
