The sweeter side of Salsa

Pineapple-Mango Salsa

1 small can chunk pineapple (in its own juice) OR 1/2 to 3/4 cup of fresh pineapple
1 small mango peeled and cubed
1 tomatillo
1/4 chopped red onion
2 tbsp olive oil
2 tbsp brown sugar
1/2 medium sized jalepeno, finely chopped
salt and pepper to taste

Place olive oil in a skillet and when heated add onion. Saute over medium heat for about 5 minutes. Add mango and cook another 5 minutes, stirring frequently. Then add the tomatillo, jalepeno, and pineapple. Increase heat to medium high and cook for 5 more minutes.Add the brown sugar to the mixture and simmer until the onions are caramelized and the mango is soft. Serve warm over any dish (pairs really well with Jerk chicken or any other grilled meat).Enjoy!
