Sunday Cheat: Spice Cake w/ Butter Cream Frosting

1 pkg spice cake
1 1/4 c. applesauce
3 eggs
1/3 c. vegetable oil
1/2 c. ea. walnuts or pecans, and raisins (opt)

Grease and flour 13x9 pan.
In a large mixing bowl, mix all ingredients well.
Bake at 350 for 35-40 minutes, until a toothpick in the center comes out clean.
Completely cool before frosting.



My version Butter Cream Frosting -

4 c. sifted confectioners sugar
Advertisement:

1 stick of butter (not margarine), softened
3 T. milk
1 healthy teas. vanilla

In a medium mixing bowl, add chunks of butter, and the sifted confectioners sugar. Whip this up on low speed for a few seconds, then add the milk and vanilla and mix on med-high speed until all ingredients are well incorporated. That's usually about 3 minutes for me.
Refrigerates well for about 3 days. (Granulates after freezing, so it's got a grainier texture. Yukkers.)

This amount of frosting will happily frost one 13x9 cake, if you don't sneak a whole bunch of spatula-fuls before it ever reaches the cake. :L icon_lol
