Family favorite Banana Cake

Banana Cake

2 1/4 cups flour
1 1/4 cup sugar
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter -- softened
1 1/2 cup mashed bananas
2 eggs
1 teaspoon vanilla

Mix together the flour, sugar, baking powder, baking soda and salt. Sift into large mixing bowl. Add softened butter, 1/2 cup bananas and eggs. Beat 2 min. Add remaining bananas and vanilla. Beat 1 min. Bake in 2 well-greased 8" round cake pans at 375 degrees for 25 min, or a 9x13x2 pan for 28 to 30 mins.

Buttercream Frosting (the very best bad-for-you frosting, lol)


1 cup butter, softened <-- real butter, not margarine
8 cups confectioners' sugar
6 tablespoons milk
2 teaspoons vanilla extract
Food coloring, optional

In a large mixing bowl, beat butter, confectioners' sugar, milk and vanilla. The mixture will be thick.

Makes: 5 cups *

This frosting recipe halves nicely. If you only want enough to frost a 9x13x2 cake, for instance, you can half exactly all the ingredients except the milk. Reduce the amount of milk to 4 T. instead of three.
