Spinach Bacon Quiche

4 eggs
2 cups milk
1 1/2 cups shredded sharp cheddar cheese,divided
1/3 cup finely chopped onion
5 strips bacon,cooked and crumbled
1/2 teaspoon salt
1/2 teaspoon ground mustard
1/4 teaspoon paprika
1 (10oz) package frozen chopped spinach,cooked and drained
1 (9inch) unbaked pie shell

In a large bowl,beat eggs. Whisk in the milk,1 cup of the cheese,onion,bacon,salt,mustard and paprika. Add spinach. Pour into pie shell. Sprinkle with the remaining cheese. Bake at 400 degrees for 40 minutes or until a knife inserted near the center comes out clean. All to stand for 10 minutes before cutting. Serves 6
