Cheesey Potato & Bacon Breakfast Casserole
8 slices bacon (I used thin & crispy turkey bacon)
4 eggs, lightly beaten
2/3 can whole white potatoes, diced
2/3 cup shredded cheddar cheese
1/2 cup small curd cottage cheese
1/2 cup mozzarella cheese
salt & pepper to taste
1. Preheat oven to 350 degrees.
2. Cook the bacon. (I microwaved the bacon (1 min 45 sec per 4 slices) on a bacon microwave tray. It's so easy! and they crisp up pretty nicely.)
3. In bowl, beat eggs. Add potatoes, cheddar cheese, cottage cheese, mozzarella cheese, and bacon (crumbled). Salt and pepper to your own taste.
4. Pour mixture into a greased pan. (I used a bread pan because I was only making enough for 4, but I cut the original recipe in third and then modified it as above. That one called for a 13 x 9 dish.)
5. Bake uncovered for 35-40 minutes or until set and bubbly. Let stand a few minutes before cutting. (I cooked mine at 350 for about 20 minutes. When I checked it the edges were getting browned, so I reduced the heat to 325 for another 15 minutes. It turned out perfect! )
Serves 4.
I think this recipe would be really good with sausage instead of bacon. Also, if you want to cut calories and fat, egg beaters would probably be good too and use low fat cheeses. Also, you can add onion if you prefer, I just left it out because I don't like it. Oh, and it would be even better if a few minutes before it was done you sprinkled cheese on top for it to melt. I was going to, but forgot. Whoops! Overall, nice Sunday brunch type of dish.
