Italian Sub Stoup with Garlic Toast Floaters

Feeling a bit lazy lately with all of my sniffling and lying on the couch, I decided to cook dinner tonight for my husband who has been so sweet as to have been fixing dinner for me lately while I've been sick. A lucky woman I am, that's for sure. Our dinner tonight was Rachael Ray's Italian Sub Stoup with Garlic Toast Floaters from her latest cookbook.

Usually, I find myself running crazily around the kitchen while attempting her recipes. Cookbook to oven to refrigerator to cutting board, I must be quite a sight. Often, my running also involves frantic attempts to stop something from burning or bubbling over. I am normally an organized person, but cooking that involves many different fresh vegetables, herbs, and the like is still beyond my ability to do thoughtfully. While I can read recipes, I seem to perpetually find myself in a crisis, needing to add this or that and not having chopped it or prepared it yet.

Tonight's dinner was surprisingly easy, however. With minimal chopping and fretting, I was able to make a tasty soup that my husband absolutely enjoyed. He even mentioned how full he was afterwards! Definitely guy food. The garlic toast floaters were also easy. Using some precut bread from the supermarket bakery, I whipped up a very tasty and spicy addition to our dinner.

If you're looking for an easy and hearty meal for a cold evening, definitely give this recipe a try. If my sniffling self could do it, then anyone can!
