It all started well, at least.
I began dinner early yesterday as my husband would have to eat quickly before an evening meeting. I had planned to make Rachael Ray's My Big Fat Greek Burger. I had been looking forward to making this recipe because I love Greek food, and so these burgers sounded delicious.
I started cutting the veggies and got them all prepped and ready. No problems there. Then I realized that the spinach had not thawed out yet, and so I placed it in the colander and sprayed it with hot water. I cooked the garlic and onion and then turned to the meat.
That's where it all went wrong.
The meat hadn't thawed either, and so I put it in the microwave. As I had too many things going in the kitchen, the breaker blew. Dang. I managed to flip the breaker, but I couldn't remember how to set the microwave clock. And without the clock set, it won't cook.
After several minutes of cursing and pushing buttons, I managed to set the microwave and thaw the meat. I set to making the patties and realized that they weren't sticking together. We'd be having more of a Greek sloppy joe than a Greek burger.
Ok, ok. I can handle this. Luckily my husband only cares if it tastes good. No plating concerns in our house.
Then I couldn't find the plain yogurt that we had bought the day before for the yogurt sauce. It was nowhere to be found. I cursed some more and searched the refrigerator from top to bottom. I even looked in the freezer. Nothing. At this point, I was about ready to cry, thinking about my perfect dinner going down the tubes. Wondering if I was even cut out to cook like this. But I continued. I grabbed the mayonnaise and threw it in the food processer in place of the yogurt and mixed it up.
Running between the "burgers" and the food processor and the toaster, I managed to finish the two spreads and cooking the meat and toast the buns.
And even after all that, we still had a good dinner. Everything tasted great. The burgers were wonderfully fragrant with the fresh herb spreads, feta, and spinach. And the special rolls that I had bought for the burgers were yummy and brown.
I guess every home--and professional--cook has days like this. All things considered, dinner turned out pretty well.
