Traditionally, I haven't been the most adventurous of eaters. That title was
reserved for my brother. Always willing to try something new, he often found
spices and flavors that he loved. More often than not, however, he found food
that went into the trash.
Me? Well, I pretty much chose what I knew. Jello, hamburgers, chocolate cake, etc. That's why last night's dinner was a perfect choice. A spicy twist on an old favorite.
Rachael Ray's BLTs with Avocado and Spicy Mayo was easy and delicious. The hardest thing was cooking the bacon! (One chore that I really hate and usually reserve for my husband. Bacon is one of his favorite comfort foods, and so he doesn't really mind cooking it.)
I absolutely loved the spicy mayo. It added some different flavors to a sandwich that I usually had with plain ole' mustard. And I must admit that this was my first taste of fresh avocado as I'm not a big guacamole fan. Combine that with the crisp lettuce and tomato, and we had a wonderfully delicious meal that was so simple.
Perfect for tired, plain old vanilla me!
