HAWAIIAN YAMS - CASSEROLE

2 c. sweet potatoes
1 egg
1 c. sugar
1/2 c. coconut
1 sm. can Pet milk
1/2 tsp. salt
1 tbsp. vanilla

Mix mashed sweet potatoes with other ingredients and bake 25
to 30 minutes at 350 degrees.


CHERRY TOPPING FOR CASSEROLE:

1 c. sugar
3 tbsp. cornstarch
1 (#2) can crushed pineapple
10 oz. jar cherries, drained
Advertisement:

2 tbsp. red food coloring

Mix ingredients and simmer over low heat until thick. Place
this on top of cooked sweet potatoes. This can be fixed
beforehand and frozen. Set out of freezer and let thaw at
room temperature. Great for holiday meals - very colorful.

I eat sweet taters every week and this seems like a good casserole to freeze in single servings.
