Company Italian Chicken
(1) 5 lb or so whole roasting chicken
(1) bottle of zesty italian salad dressing
salt, pepper
If chicken comes with giblets-disgard
Wash chicken inside and out.
Pat dry, Place chicken breast side up, uncovered in a baking dish
Pour 3/4 of the bottle of dressing all over and a little in cavity.
Salt & Pepper the chicken
Place in a preheated 350 degree oven , uncovered for 1 hr 45 min or untl 160d or until juices run clear.
I serve this with twice baked potatoes, candied carrots and a cesar salad all of which can be prepared ahead of time. I will post those recipes too.
