I made up this recipe before I started WW, but you can modify it to fit your lifestyle. It freezes well!

2 cups cooked penne pasta (you can use less if you are on a low-carb diet)
2 chicken breasts, seasoned with garlic, salt, pepper, and cumin
1 red bell pepper - chopped
1 green bell pepper - chopped
1 medium onion - chopped
1/3 cup frozen corn
1 jalapeno
1 can low-fat or fat-free cream of chicken
1 cup cheddar cheese (or less if you are dieting)
1/3 cup queso cheese
1 fresh diced tomato

Great Fast Food Weight Watchers Guide

Yikes, some of that stuff NOBODY should eat regardless of your diet. How scary to realize what I've eaten (as far as an overload of calories) and not realized!

Thankfully some stuff is really not all that bad at all--even good!




Weight Watchers Disclaimer

I am on weight watchers, but only loosely. I got my hands on one of their books. I don't pay to go to meetings. I am not a "member". Their point system works really well for me and my husband. (In the last month, between the two of us, we've lost almost 30 pounds) Yea!

My recipes will have ww points on them, but if you are not on ww or even dieting, they are great recipes for your family. I'm not a health nut, I just want to build a good foundation for my children.




Do Not Try This At Home

This morning I tried some fat free cream cheese for the first time. Yuck! I enjoy heathy foods, but not at the cost of good taste. Does anyone know if low fat cream cheese tastes okay?


Hot Dogs For Supper

Low fat hotdogs only have 1 point for WW! And they taste great! If you have access to WW's special bread (2 slices for 1 point) then you could have hotdogs with onions, ketchup, mustard, and pickle relish for only 2 points per sandwich. 3 points if you have two of these puppies.

Toddler friendly, my husband gets his meat, and I can buy these ahead of time and toss them in the freezer for a day when I'm too tired to "cook". Come to think of it, that's just about everyday.


Strawberry Angel Food Cake

Low Fat, Quick and Easy, 4 Points for Weight Watchers

My favorite dessert lately!

1 1/2 c. strawberries, rinsed and cut in chucks — 1 point*
1 slice of angel food cake (1/16 of a 10" cake) — 2 points*
1/4 c. whipped cream — 1 point*

Tossed in a bowl and enjoyed! I love this treat with my three year old and husband, but I also love it on the front porch watching the sunset after the kids are in bed! (since then I don't have to share if anyone finishes theirs before me...)
