Sweet Potatoe Baby Casserole

Sweet Potatoes Baby! It is like how all my veggies should be heavenly. Butter, pecans, brown sugar, eggs, milk, more butter, and now we even added marshmallows! I think we covered all the food groups! (Giggles) ok, if not the food group at least it is pleasing to the eye in the color palate. I prefer to use fresh sweet potatoes only because they are drier and firmer. Everyone opts for can. Little mushier, but it is still good. Fresher is better though. Here it is for you Miss. Enjoy. I have been making this for 20 years as I am posting this. My son was just in kindergarten. My best friend’s sister use to bring this when I use to get tired of making this. So we never stopped having this on the holidays. We still love this. Some things you never tire of.

Eat this warm or cold. With sour cream and some extra sugar sprinkled on top.
You can use pie filling as well then top with sour cream as well.
