Uncle Tony's Ribs

My uncle is a great cook. He makes best BBQ Roasted chicken and Ribs. These are oven roasted but still good. My father and my uncle should have had a restraint. Their secret is patience & slow cooking. NO BOILING the meat. Even when they grill they never pre-boiled their chicken or ribs. You need to just take your time and be patient. Cook everything slow and tenderly. Sauce is always very last so it does not dry anything out or burn. You can come up with your own seasoning when you cook/bake/grill. What I have listed is what we are doing for now, but that changes too. Remember secret is not to over crowd, slow cook. Pick a sauce you like or make one. Be creative; don’t be afraid to try something new. My dad and uncle and grandfather always made their own sausages and bacon and even had their own smoke house. When Uncle Tony makes his chicken (THAT I JUST LOVE), He makes a whole one, just salts peppers, paprika slowly does it on a rotisserie on the grill. As it is almost done it makes a wet mix of salt, pepper, garlic powder, a lot of paprika, oil and keeps brushing this on. It is so delicious. But you have to know how to do it at the right time. I never asked or have done this. I will find out. IT is the best trust me.
