Spaetzle

Spaetzle, this recipe is so light and airy. Spaetzles are made either cutting dough off a cutting board, dropping spoonfuls into boiling water or soup, Or they sell graters and spaetzle makers. I have done all the ways. Depends on time and how your in the mood for them. Dropping off the teaspoon makes them little bigger, cutting off the board depend on thickness. They sell a grater for spaetzles and it is medium size dumplings, I have a press that makes super thin spaetzles. My entire family loves these. My mom is german. This is different how she makes hers. She does not use a recipe. I often don't. But I have been using this one. I love spaetzles with porketta is how i use it alot. Or saurbraten. Anyway is delicious, with or without juice/gravy.

Paul's Popover Pizza

This is not at all like a traditional pizza. It is more like an upside down pizza. Everyone enjoys this. Throw together a salad and your meal is done. As always I don’t follow these directions. I often make my own sauce. Then the times I don’t I fix up jar sauce. It all works. I did follow the recipe exact a few times. But the envelope of spaghetti sauce mix was some crazy amount it was cheaper to make my own or buy a bottle of sauce and doctor it up. You can even double the filling inside this. You can add pepperoni, sausage, green peppers whatever you wish. Be sure you adjust your recipe. If using sausage, sauté it with the ground meat. Or green peppers sauté them with the onions, etc…Oh for me it’s about mushrooms!!! Be sure you follow the topping correctly though. This is one of my son’s favorites.

MMM, this is so great. I serve this with homemade Gnocchi. Pass the crispy bread and butter. Ok spluge and have roasted garlic with this. Or tomato bread?

Stuffed Banana Peppers with sausage

Nice to serve on side for pasta. Great with anti pasta. You can add bits of cheese in this as in provalone. Sprinkle on little olive oil.

Italian Peach cookies

I had these at a wedding and they were unforgetable!!!! These actually look like peaches. The real deal gets filled with cream but must must be eaten that day. But they also get filled with peach perserves they are awesome as well. You brush them on outside with sugar to give them color. I found another recipe that I included to try for a variation. These are beautiful and delicious. look like little peaches.

Baked Cavatini

Cavatini? Does anyone else remember Pizza Hut making this? I use to love this super easy dish growing up when I use to go to Pizza Hut. Mind you this recipe is not gourmet. But it is easy and you can use your homemade sauce. If you have personal baking dishes like Pizza Hut has better yet. And, don’t forget to throw on all the extra gooey cheeses on top. You can anything you want to this dish. Sausage, pepperoni, ground meat, and all the veggies you want or do not want. Spicy or little spice or no spice at all. Extra cheese or little bit of cheese you can even add a layer of ricotta as well. Have fun with this one. You use to have to buy all the noodles separate. But now I think they have a bag that sells all the different noodles in one bag. Who says fast can’t be gourmet? I mean this takes a lot of thought! DO NOT FORGET THE GARLIC BREAD OR PIZZA BREAD OR HECK SPLUGE A BUY PIZZA HUT DEEP DISH AND HAVE A SLICE WITH THIS! I do crave Pizza Hut sometimes. Oh what don’t I crave?
