This recipe I found sounds delicious. But of course if you are only a pineapple fan and like to try new things. I have not tried this one yet. The recipe did not call for any meat. But it would so go great with chicken or ground loose sausage and spices. I am sure you can also turn this into a dessert if you wanted to as well. Let me know if anyone gives this a try.

This is a recipe from Mexico from friends of mine. Who doesn’t love Salsa? I love tomatoes. This is a classic salsa often referred to as Pico de Gallo. Great with tortilla chips or mixed with guacamole.

Salsa Molcajete

This from my friends who took a trip to Mexico, they had a pleasure of cooking on a country farm. They have shared all the recipes with me. I am so grateful. I am posting them so my family can find them and copy them without me writing them 6 times over!!! HINT HINT! This is made in a "Molcajete" a lava rock bowl one of the few things I do not own in cooking. But I have been on a search to own for many years. I never knew the name and now I do. You can heat these bowls and serve you mexican meal in it. It keeps your food hot. Beware some bowls are not authentic as they have concrete mixed in with the lava. Do research!

Refried Beans

Another recipe from Carol and Barry's trip from Mexico and down on the farm. This is a healtier version from the classic. It omits the use of lard replacing it with chicken stock instead. Still has the flavour without the calories or cholesterol.

Guacamole

This is another recipe from Carol and Barry's trip to mexico down on the farm. This is a simple rather delicate dish. Prepare just before serving and don't forget to leave the avocado pit in the serving dish. This acts as a perservative. Of course Pass me the sour cream! Ok and the cheese please! Wait some black olives too! Okay now where are the chips? No, seriously this is also for main meals as in chiles rellenos on the side with refried beans. Now, I am hungry!

Chiles Rellenos

My daughter and I were in California long ago and had one of the best Chile Rellenos ever. If you EVER are lucky enough to have great ones nothing EVER compares. My friends Carol & Barry went to Mexico and while there they had cooking classes on a farm. When they returned they shared this copy of Chile Rellenos. They said they were amazing and agreed if you had great ones nothing compares. My daughter and I are forever grateful that they shared this recipe! Thank you Laurel & Hardy!
