Who does not love coconut macaroons? Okay I guess those who do not love coconut. They are like sweet little bites of candy or mounds without the chocolate. IF just if you want you can even coat your macaroons with any type of chocolate you desire. I personally am not like my girlfiend Helen who has an IV of chocolate in one arm and the other hand feeding with M&M's. She is so addicted and and heart of gold. Me I love coconut and pineapple and everything else there is I presume!

Okay, this cookie is indescribable, PERIOD! It is thee best gingersnap you will ever have. Do NOT be alarmed by all the spices. But then again, who knows, everyone’s taste buds are so different. My mother who eats the tiniest hot stuff loves and tolerates this amazingly. Anyone who does not do hot or spicy LOVES this cookie. And yet days this doesn’t hit you when you bit it and sometimes you bit this it has a kick. But I can’t tell you enough that you need to make this and DO NOT OVERBAKE IT and Enjoy this with a cup of milk. I have had this recipe forever. My dear sweet God baby who started baking has made this recipe and has passed this cookie out and everyone she gave this too has asked her for this recipe. These are so basic and so delicious! Yes, easy to make. Fill the house with such warmth and comforting smells. You can make these in any size. Before my children were born I lived in an Amish community, when I was pregnant with my daughter I use to walk to buy one of these cookies they were plate size. Ironic thing is to this day this cookie is one of her favorite cookies. I will give you the recipe I make and I also have an Amish version. They really are both the same.
