Carribean Island Salmon Salad

This is refreshing and delish!!!

Ingredients

1 1/2 cups Salmon
1 cup tomatoes, diced, seeded
1 cup red onion, chopped
1 cup pineapple chunks
1 cup celery
1/4 cup walnuts
1/2 cup sour cream
Lemon wedge or slices for garnish

Preparation

Cook salmon. Cool. Place in mixing bowl. Shred the salmon. Add and combine all remaining ingredients except sour cream. Gently fold in sour cream. Chill for 2 hours. Serve on a bed of spinach, leaf lettuce or some other type of greens. Garnish with lemons.

Old Bay Shrimp


**EZ and quick. This recipe works with many types of seafood.**

Cook time: Way less 20 minutes
Yeld: 3 servings

Ingredients

1 pound shrimp
Lemon pepper
4 tablespoons butter

To Cook

Sprinkle shrimp on both sides generously with lemon pepper and let flavors marry for about 5 minutes. Melt butter in heavy skillet over medium high heat. Add the shrimp and cook for a few minutes per side till cooked through. Serve.



Lemon Pepper Fish


***So EZ and quick. This recipe works with many types of seafood.***

Cook time: Way less than 20 minutes
Servings: 3

Ingredients

1 pound shrimp
Lemon pepper
4 tablespoons butter

Sprinkle both sides of the shrimp liberally with lemon pepper and let them sit for 5 minutes. Over medium heat, melt butter in heavy skillet. Add the shrimp and cook for about 2-4 minute each side (generally about 3 minutes should do it). Once cooked through, serve.



Shrimp In Rich Brandy Sauce

Cook Time: Less than 20 minutes

Ingredients

1 pound of shrimp, devieined
5 Tablespoons butter
1/2 cup brandy
3/4 cup heavy cream
Slurry

Over medium high heat, cook the shrimp through in butter (about 4 minutes or so). Add the brandy, then up the heat and let it go to a rolling boil for about 1 minute to reduce. Add the cream, stirring in and allow to heat. Add slurry, to thicken, if desired (or not just fine as is). Remove from heat and serve.

Jalapeno Shrimp Bites


On a scale of 1-10, 1 being mild, this is about a 4, in my book. But I do like my food to have a bit of a kick!!!

Yield: 2 Servings
Total Prep Time: Less Than 20 Minutes


**When handling the peppers be sure to wear plastic gloves for protection.**


Ingredients

12 shrimp (16/20 count), deveined, slice the shrimp so that they will lay flat on peppers.

6 jalapeno peppers, sliced in half, seeded

6 slices bacon, cut in half

1/2lb gorgonzola (or blue cheese milder) softened

2 tablespoons olive oil or vegetable oil


Preparation


Fill peppers with cheese. Place shrimp face-down flat on top.

Wrap peppers and shrimp with bacon. Secure with toothpick.

Heat a heavy skillet on medium high heat. Use the 2 tablespoons olive oil to coat the pan bottom.

Saute about 3-4 minutes on each side beginning with shrimp side first.

Serve and enjoy!!!

4-5 tablespoons butter
lemon-pepper

Sprinkle shrimp with lemon-pepper. Let sit about 5 minutes. Melt butter over medium heat in heavy skillet. Add shrimp and saute until pink or cooked through. Best served warm.


Shrimp Curry-Butter Stew



Yield 4 servings

Messy but deeee-licious!!!

1/4 pound butter
4 teaspoons curry powder
2 teaspoon minced garlic
48 large raw shrimp

Over lowest heat setting, melt butter in a heavy skillet. Stir in curry powder and garlic then add shrimp in a single layer (do this in batches if necessary). Cook until shrimp turn pink, 4-5 minutes. Transfer to serving dish, scraping the curry sauce over shrimp.
