1/2 t. fennel seed, crushed
2 (15 oz.) cans black beans, rinsed and drained
1 (14 1/2 oz.) can beef broth
dash ground red pepper (opt.)
1/4 c. dairy sour cream
2 c. chopped tomatoes
2 T. snipped fresh oregano
In a large saucepan, cook sausage,

2 ripe avocados
4 cloves garlic
1 cup heavy cream
1 cup chicken broth
1 tablespoon butter or margarine
Clean the spinach and remove stems. Blanch the spinach until just
wilted.
Cut the avocado in half and remove the pit. Remove the avocado from the
skin.
Place the spinach, avocado and remaining ingredients into a blender and
puree until smooth and creamy

1/4 cup parmesan cheese
3 tablespoons finely chopped chives or dill
1 teaspoon paprika
1/2 teaspoon salt

Peel the potatoes and cut in thin wedges. Dice ham and red pepper.
Alternate potatoes, ham, pepper, and grated cheese in a buttered, oven proof dish.
Mix eggs, sour cream, whipping cream, Parmesan cheese, and chives.
