Beef Stock Recipe

Ingredients:
1 Kg Shin beef on bone cut into 20mm pieces
1 Bunch of parsley roughly chopped
1 Boquet Garni
2 Bay Leaves
2 Large onions peeled and chopped
2 Carrots chopped
3 sticks of celery chopped
3 Teaspoons whole peppercorns
2 Teaspoons salt
4 Litres cold water
2 Table spoons olive oil
1/4 Cup brandy or sherry
