IRISH CHEDDAR NOODLE BREAKFAST MOLD

We had this at a B&B just outside of London. When we we touring England, we did not make reservations so toward late afternoon we always started to look for a good B&B or hotel. We stopped at a place that looked very inviting. The owner said he was booked but was willing to give us his room. He said he made the most unique breakfast in all of the British Isles, and I think I would have to agree with him. He made a cheese and egg noodle mold filled sausages and rashers. Yum, yum, and more yum!!

IRISH BREAKFAST: EGGS WITH CRAB

This just might be the Irish version of Eggs Benedict. Since seafood and fish are so plentiful in Ireland, it seems an obvious choice to start the day when a more elegant meal than the traditional Irish breakfast fry is desired. We had this morning entree in County Derry in the Province of Ulster in Northern Ireland. We stayed in a B&B just outside Derry. [You can tell my allegiance since I refer to the city as Derry and not Londonderry.] Served with asparagus and mushrooms, it was delicious.

TRADITIONAL IRISH BREAKFAST

It is often said that the modern traditional Irish breakfast is what the Irish cook truly does best. And I agree. In the North it is called the Ulster Fry and often includes potato bread. If you are visiting for a week or more, you probably will not want to eat so much fat and cholesterol every day so now many Irish B & B owners will offer cereals and toast and other more nutritional breakast items. The breakfast fry is usually consumed at least once a day whether at breakfast or dinner.
