This recipe is presented not only because of its flavor but because it was one of my mother's favorite dishes. She just loved it. I wish she had been with us when we had this for lunch at a restaurant in Powerscourt off Grafton Street in Dublin. And I wish I could still cook this for my mom, but I do make it for myself on occasion, and I feel close to her when I do. We all have recipes like this that make us feel close to lost loved ones--a special, unique ingredient of cooking and food sharing.

We decided to tour an inland county to see the famous Irish horse racing and golf amenities. So we set out for Kildare on a day trip from Meath. We stopped in Naas for lunch and had a delicious entree of chicken Oscar. I hope you enjoy this poultry/seafood dish as much as we did almost 25 years ago. You could substitute medallions of veal, pork, or beef. Since those meats were completely tasteless in Ireland in the 1980's, most of these recipes, as you may have noticed, are chicken and seafood.

IRISH CHICKEN POSEIDON

On a trip to County Mayo in the Province of Connacht on the west coast of Ireland, we stopped for lunch at a wonderful restaurant in Westport. We ordered an entree called Chicken Poseidon. The description sounded wonderful, and none of us was disappointed. My family loves this entree. I hope yours will enjoy it too. I found the basis for this recipe in an old Southern cookbook of my mother's and have altered it over the years to duplicate that dish served in County Mayo.

IRISH CHEESY CHICKEN SUPPER

I ordered this dish when we stopped at a pub in Ballyconnell in County Cavan. To my surprise it was almost identical to a friend's recipe. Paula had served this dish at a family dinner 10 years before. We were on a day trip to the Cavan Crystal Factory and Visitor Center to see how Cavan crystal compares to the Waterford. The menu was comprised of mostly farm food which was not surprising since Cavan is an agricultural area in the north. We selected this chicken entree and were very pleased.

IRISH CHICKEN AND POTATO CASSEROLE

This was first served to me when I was too sick to cook for my children while living in Ireland in the eighties. A neighbor made it for me and said it was her mother's recipe. My children and I loved it, and I have served it a couple of times a month since then. You could subsitute rice or noodles for the potatoes, broccoli or fresh green beans for the mushrooms to vary the flavor. Any combination of your favorite starch, meat, or vegetable would be great to make this all-in-one casserole dish.
