Fancy Dinner - salt encrusted beef tenderloin

Made a relatively easy to make not too much time at the last minute fancy dinner for company
We had:
Herbed Crostini topped with tomato/basil/garlic
Salt encrusted beef tenderloin
spinach ricotta gnocchi
brocolli
homemade dark chocolate ice cream

We made Marshmallows!!

Today, my daughter and i made marshmallows - i thought this would be fun for her (and it was) but i had no idea how great they would taste!
They were not that difficult to prepare, although some basic candy making skills would be helpful - not that i had any, and i managed - still i wish someone would have told me how messy things can get.
Also, you have to make them ahead of time because they need to chill for at least three hours to set up
- once done they keep a week

Faijitas, black beans, guacomole

Tonight - Faijitas! I am trying skirt steak, usually I use flank steak - i made a simple marinade with olive oil, garlic, oregano, cumin, onions, soy sauce and lime juice (careful with lime in a marinade, don't marinade for more than a few hours or the lime will start to 'cook' the meat)

Pizza! Homemade, yummy and easy

Its Pizza Night!! A simple yeast dough for the crust (a snap if you have a standing mixer with a dough hook) and some sauce, hot sausage, mushrooms, cheese and whatever else you like and we are good to go!

Here's my pizza dough (for two medium pies)
1 cup hot water
1 package active dry yeast
1 tsp sugar (to feed the yeast)
2 - 2.5 cups bread flour
1 tbs olive oil
- Let yeast dissolve and bubble in water and sugar for 5 minutes
add flour, salt and olive oil and stir in standing mixer with dough

Southern Decadence

Once a month we eat - as in Carbs, Fat etc - still healthy and organic and all, just higher in calories, fats and carbs then typical
Tonight - Southern Fried Chicken, Mashed Potatos, Gravy, Corn on the Cob, Buttermilk Biscuits, Green peas and pearl onions and lots of BUTTER
Desert - homemade dark chocolate ice cream!

Healthy Mac and Cheese

Tomorrow is southern fried chicken! A rare indulgence, and I have started today - the cut up chicken was washed and dried, salted rinsed and is now soaking in buttermilk and onions...

Tonight we're having a healthy version of macaroni and cheese made with spelt pasta
I just make a white sauce and use 2% milk instead of whole - I use real chedder cheese (medium) about 6 oz grated and stir that into the sauce. The pasta I use is 100% whole grain spelt -
