It was a long week, so a little take out sounded pretty good

Tonight I took a break and went out to dinner at Bentleys with some good friends. There is definitely something to be said for girls night out!

Well, after a vegetarian dinner last night I thought I better make something with beef tonight, so hamburgers it is, with a little kick then tater tots of course (some people have to have their potatoes), and a healthy salad with kale and mango.

I found this recipe in a magazine at Henry's in the check out line. I'm usually so good about just looking at all those tempting magazines and I always ask myself if I will really use it, and this time i decided I probably would, especially when I am always looking for a new way to use up some of he Cost Co chicken breasts in my freezer. With my daughter home for he weekend we decided to make some pizza for family and friends. There is just something really fun about making bread dough from scratch and then people can make ere own pizza if they want. Along with that we had a green salad and some fresh fruit.
Then for dessert we had ice cream. I have a new favorite flavor, thanks to my neighbors, who got me started on Ben and Jerry's Pistachio, Pistachio. It is absolutely delicious!

Tonight's recipe was from Fine Cooking Magazine Griling 2010. The recipe called for skirt steak but I used flap steak from Cost Co. The salsa really makes the dish I served it with Spanish rice,corn tortillas, a great salad my neighbor made a fruit salad. Then for dessert my daughter made delicious cupcakes.

Tonight I tried a new recipe I found in Ladies Home Journal and I served it with brown rice and broccoli, steamed and then stir fried with garlic and sesame oil.it was a success

Well, my husband thought I was crazy for cooking chili when it is hot out, but I wanted to try a new recipe I found online. Unfortunately it was very disappointing, even though it had great reviews. I guess you never know without trying, but I won't make that again and I certainly won't post the recipe.
If I have time tomorrow I am going to make cashew chicken. My daughter is coming home for the weekend and maybe she will have some great ideas for dinner. She usually does.

As I have been thinking about all the different recipes I want to try I am also trying to take advantage of the food I already have in my pantry, freezer, fridge etc. Those ingredients are the inspiration for some upcoming menus. I am also being more conscious not to waste so much food, which can take some creativity.
