This probably started as the way some smart, thrifty peasant found a delicious way to use up some bread that had gone stale! With great tomatoes available in our markets for longer periods in years past this doesn't just have to be a summer salad. Be sure to use fresh basil and parsley, and extra virgin olive oil to bring out all the fresh flavors.

This is the most refreshing salad any time of the year you can get good cucumbers. Remember to slice the cucumbers and onions very thin, and the salad will be ready to eat as soon as it has chilled! You can substitute rice wine vinegar to make it more authentic!

The dressing here is the key. You can mix up the beans however you wish....get creative! No mayo means a safe summer salad for picnics, or outdoor buffets! Enjoy!!

German Cucumber Salad

Of all my "German" recipes, this is probably one of the most "American"! Since there is no mayonanaise, it can stand the heat! That means a great bar be que, outdoor buffet dish that is refreshing, and welcome on a hot summer night!

Kauai Potato Macaroni Salad

This, or some version of it, was always the "potato" salad I found when I lived on Kauai. Individuals may have similar versions, but this is the usual version I like to use. If I have it, I substitute chopped celery for the celery seed. It is different, but good each way. Make a day ahead, and check the morning you are going to serve. If it seems too "juicy, add more macaroni, and mayonnaise.

Corn Bread Salad

The old Southern tradition of buttermilk and cornbread revisited in a beautiful, delicious layered salad that easily serves 8 to 12. Make it with smoked turkey and it becomes a one dish entree. Serve it with a big pot of chilli on cold winter days or nights, or part of any summer buffet or cook out. It is made ahead at least 4 hours and gets even better if left at least overnight!
