This recipe is for sea scallops which are the larger scallops in the fish case. It is very similar to a shrimp recipe I've used for years and always serve New Year's Eve to guests. It will be delightful with a spinach and strawberry salad and roasted asparagus, and a mushroom rissotto!

Baked Spaghetti For a Crowd

This is a wonderful pasta entree to feed a crowd. It can be down or up sized making it great for pot luck dinners, and also wonderful for family reunions or as a great change to the usual fried chicken, or baked ham to take to a family celebrating a baby's birth or even grieving a loved one. Take the fixings for garlic bread, and the ingredients for an Italian tossed salad that tastes a great deal like the one at that famous restaurant. (See the dressing recipe on my blog)

Hawaiian Ham Balls

Add pineapple, and suddenly your entree becomes Hawaiian! Without the pineapple, it is similar to old Amish recipes. This is a great way to use up the left over ham in surprizing way! This heirloom style dish was popular back in the 40's and 50's and has been pretty much forgotten....Try it! Let's start a new trend! Serve with rice, or smashed potatoes and a nice green vegetable. Try making mini ham balls as an appetizer for your next party!

Do this for your family, friends and for any time you want a WOW....how did you do this?? kind of reaction!!!!

Red Wine Onion, Mushroom and shallot Sauce

This will dress up any steak, and is not a fussy sauce that requires close attention. Fresh ingredients are wonderful, but in a pinch, or on a camp trip using canned mushrooms and dried herbs and seasonings will still make a wonderful dining experience!

Tender, flavorful and Cheap Flat Iron Steak

A "new" cut of beef is showing up in more restaurants, and supermarkets called "flat iron" steak. The name comes from the shape of the cut of beef. It is a much cheaper cut than most of the popular steaks, and I think more flavorful. I prefer it to a flank steak, and will use it whenever I can in place of the flank steak. It is much more tender! It truely is like cutting into a filet after about 2-4 hours in the red wine marinade! I served it with a red wine mushroom, onion & shallot sauce
