Moroccan Turkey with Cranberry Couscous

I bumped into this recipe from Cooking Light when I was trying to figure out what a "Turkey London Broil" might be (and how to use it). Turns out that Turkey London Broil is simply a boneless turkey half breast.

Green Chile Sauce - Vegetarian

I found this tempting recipe at Small Wonder Farm's website ( http: www.smallwonderfarm.com )
In addition to this recipe, they have many others that sound great!

The sauce from this recipe may be used as a gravy, as a simmer sauce for meat, or used with beans and rice to fill vegetarian tacos, burritos or enchiladas.

Su Hong's Szechuan Eggplant in Garlic Sauce

This is the recipe for the killer Eggplant in Garlic Sauce made by Su Hong Restaurant (in Menlo Park and Palo Alto, California.) HoverCorte found it for me -- I'm guessing he found a saved file since, the recipe comes from the Palo Alto Weekly, and he indicated that the paper's online archives only go back to 1994.

Looks like it'll be time to experiment with this, since I'm hoping to have a few eggplants from the garden this season! Will report back.
