Butter Cookies (for special occasions)

When I was a child, my Godmother, Pearl, would bring or send butter cookies every Christmas. Although some of them would break into pieces, we'd always seek them out to the very last crumb. They were thin, crisp and delicious, yet not too sweet. This recipe comes from the 1950 Betty Crocker Picture Cook Book.

When I was in grad school, I was lucky enough to have a friend who loved the combination of spice cake and penuche frosting. It was her favorite cake variety, so she made it for herself (and the rest of us) to celebrate her birthday. Since then, I've been looking for a recipe that doesn't make too big a cake. Here it is!
This version makes a single layer in a square 8" x 8" baking pan (or even a 9" x 9" pan, although it will come out thinner.)

Noodle and Cheese Kugel

Lemon Truffle Pie

This pie recipe is based upon one that won the 1992 Pillsbury Bake Off, and its filling of lemon, white chocolate, and cream cheese are awesome. More recent recipes indicate that you can substitute light cream cheese (Neufchatel cheese) to reduce the fat and calories, but since I only make it on special occasions, I use the real thing.

It's Apple Season! The Apple Dumpling Caper

I love apple dumplings. I got spoiled some time ago when I got excellent apple dumplings at a restaurant (no longer around) in Menlo Park, CA called "Late for the Train." When I saw this recipe it sounded like the closest to that late, great dish. Especially yummy with ice cream or heavy cream poured and mixed in as you eat it. Heaven!

Search for the 9" Cheesecake Recipe

I've been looking for a plain two-layer cheesecake recipe that I used to have (not sure how I misplaced it) -- made in regular 9" pie tins. I found one that sounds similar today on Cooks.com, but it makes two pies. Guess I'll have to give one of them away or figure out how to use the equivalent of half an egg (halving the recipe requires 1.5 eggs).

A Great Day for Melt-in-your-mouth Cookies

While not identical, these cookies all are similar to our beloved Mexican Wedding Cakes. The Butterballs use granulated sugar in the dough, the Melting Moments substitute some cornstarch for some of the flour.
The Mexican Wedding Cakes and Butterballs incorporate chopped nuts, while the Melting Moments don't. My original recipe for Butterballs used margarine, but I think it's worth the $ for real butter. Enjoy!

Lemon Luscious Pie

I first made Lemon Luscious Pie in the late 1970s from a recipe in a Pillsbury dessert cookbook I'd been given by my grandparents. With the passage of years I managed to misplace the recipe, but I've found it again. It's another great thing to make when you have too many lemons.
One interesting thing about this pie is that it tastes a lot like a lemon cheesecake. You may want to try it with a crumb crust or no crust.

Zabaglione - Italian Custard

I first made this some 20-plus years ago, and it's still great! You'll want to have a double boiler or use a metal (porcelain-coated metal is fine) bowl placed over a pot of water. This is quite rich, so it's probably best as a special occasion treat.

Ginger Snaps
