Balsamic Steak Sauce
1 tbsp clarified butter or olive oil
2 tbsp minced shallots
1 cup Madeira wine
¾ cup balsamic vinegar
1 tbsp butter
Sauté shallots in clarified butter
Add balsamic & Madeira
Reduce to ½ cup
Remove from heat
Whisk in butter
