July 27, 2007, 1:13 pmThere Are No Rats in Ratatouille
June 27, 2007, 4:55 pm
In honor of the upcoming release of the movie "Ratatouille" I this thought would be perfect for today's topic. What is it? The dish's origins can be traced to the Provence region of France and doesn't contain meat of any kind, neat even rat. Ratatouille is considered a ragout usually consisting of tomatoes, zucchini, eggplant, garlic, sweet bell peppers and herbs simmered in olive oil. The word ratatouille literally translates . . .

Ole! Mole!
April 28, 2007, 8:44 pm
In celebration of Cinco de Mayo, this post is about the densely delicious sauce, mole. It may appear
non descript or even boring, but one taste of a traditional mole will have you coming back for more.

Culinary Topic of the Day: Panko
April 22, 2007, 8:41 am
To panko or not to panko? That is the question. Panko is unseasoned Japanese bread crumbs valued
for their light texture and airiness when cooking with them. Treasured by chefs for many years in
restaurants, these bread crumbs are relatively new to home cooks. They can be found in some
"ethnic sections" (whatever that term implies) of most grocery stores and ordered online. They are
very versatile and can be used as a topping for casseroles and breading for fried foods.

Flavors To Celebrate Spring
April 20, 2007, 10:38 am
A Fresh Way to get Your Slice On (or eating your pizza).
I love salmon and can eat it any way, anywhere. So I thought, why not on pizza? to be honest,
I didn't know I liked asparagus until I had it on pizza at a friend's house. I thought these to
food ingredients represent spring so well, eating them on pizza was a great to showcase them.
The dough I made has a certain nuttiness with the addition of whole wheat flour. It's just another
flavor level of this fresh pizza.
