Easy Breakfast Nacho Bake

8 oz bulk breakfast sausage, cooked, drained, and crumbled
4 large eggs, lightly beaten
1/4 cup sliced green onions
2 Tbs melted butter
1 package tortilla chips, coarsely crumbled
2 cups shredded Cheddar cheese
16 oz Ortega salsa - homestyle recipe (mild)

Preheat oven to 350 degrees.

Combine sausage, eggs and green onions in medium bowl.

Pour butter in medium baking dish; add sausage mixture. Top with
chips; sprinkle with cheese.

Bake for 10 to 12 minutes or until eggs are set

Tortilla Scramble With Salsa

2 Tbs butter
10 large eggs
1/2 cup Carnation evaporated milk
1/2 tsp ground cumin
2 cups coarsely-broken tortilla chips
1 cup shredded cheddar cheese
2 Tbs chopped fresh cilantro, (optional)

Yogurt Popsicles

1 quart plain yogurt
1 can orange juice concentrate - (6 oz)
1/3 cup honey
2 tsp vanilla


In a medium bowl, beat yogurt, thawed concentrate, honey and vanilla,
blending well. Pour into small paper cups. Stand a plastic spoon in
each cup for a handle. Freeze.

To serve. Peel away paper cup.

Notes: A frozen breakfast treat - great to have on hand!

Texas Breakfast Tacos

1 lb Chorizo Sausage, Bulk
1 cup Onion, Finely Chopped, 1 Lg
1md Green Bell Pepper, seeded and cut into strips
1 Tbs Butter
12 lg Eggs, Beaten
10 Flour Tortillas ( 7- 8" diameter)
6 oz Cheese, Shredded (Colby and Montery Jack blend)
2 Tbs Butter, Melted
Guacamole
Fresh Tomato Salsa

Cook and stir the sausage, onion and the bell pepper strips in a
10-inch skillet over medium heat, stirring frequently, until the
sausage is done, about 10 minutes; drain and reserve.

Sunshine Toast Cups

12 slices sandwich bread
1/4 cup butter, melted
6 slices deli American cheese - (3/4 oz ea)
1/4 cup water
10 eggs
2 Tbs butter
1/4 lb sliced deli ham, chopped

Heat oven to 400 degrees. Flatten each bread slice with rolling pin.
Make 1-inch lengthwise cuts into each corner of bread slice with sharp
knife. Brush both sides of all bread slices lightly with melted
butter. Gently press each flattened bread slice into cups of ungreased
muffin pan, overlapping crust to form cups. Bake fo

Veracruz Breakfast Biscuit

1 1/2 cups sauteed onions and green peppers =09
6 oz sweet Italian sausage, casings removed, chopped and cooked - (1
1/4 cups)
1 cup canned black beans, rinsed =09
1/4 cup Tabasco brand Pepper Sauce =09
12 eggs, beaten =09
1 1/2 cups hash browns =09
1 cup grated Monterey Jack cheese =09

Combine and heat the sauteed onions, peppers, sausage, black beans and
the Tabasco brand Pepper Sauce. Hold warm.
