1-1/2 cups chopped celery
1/2 cup chopped green onions
1/2 cup salad oil
3 Tbsp vinegar

2 cans small shrimp -- drained & washed

Cook the rice. You can use either long grain rice or Minute rice. If

1 can crushed pineapple (20 ounce) undrained
2 Tb plus 1 1/2 tsp butter; divided
1 Tb lime juice
Pastry for 2 crust (8 inch) pie
1/4 cup light corn syrup
1 tsp water
1/4 cup sliced unblanched almonds
In a saucepan, mix 2 Tb sugar and cornstarch; stir in undrained
pineapple. Over medium heat, bring mixture to a boil, stirring
constantly. Boil until clear and thickened, about 2 minutes. Stir in 2
tablespoons butter and lime juice.
Preheat oven to 425 degrees.

In medium bowl, beat cream cheese and sugar until smooth. Carefully
fold in whipped cream so as not to reduce volume. Pour into piecrust.
Arrange fruit in rings over cheese filling.

1/3 cup sugar
1/8 tsp salt
1/4 tsp vanilla
3-4 ripe bananas
1 prepared pie crust
Soak tapioca in cold water at least 3 hours or overnight. Do not
drain. Transfer to a large, heavy saucepan, add remaining ingredients
except vanilla, and simmer over lowest heat, stirring now and then,
for 1 hour. Take off heat, mix in vanilla. Slice up or mash bananas
and mix into the pudding. Turn into a baked and cooled pie crust.
Chill. Serve
