Here’s a yummy recipe that yields two meals with the same amount of preparation and cooking time. I like to use two of each color pepper just because it looks pretty but you can use all one color or any combination. The meat loaf makes yummy lunches served either hot or cold.
I find that you do not need to par-boil the peppers in advance. With the diced tomatoes in their juice or tomato sauce, there is enough moisture.
